
The International Culinary Arts Academy Cebu was established by Jeremy Young in 2002. Being the first professional culinary arts school in the metro, the academy is managed by internationally educated and trained professionals. It is currently the only culinary institute recognized by the International City & Guilds of London Institute in the United Kingdom, a well-respected assessment and vocational awarding body that sets work-related qualifications in all areas of industry and commerce.
The ICAAC aims to produce highly skilled graduates who will carry on the academy’s culinary tradition of excellence. To ensure that students get the suitable training that they need, the maximum ratio of chef/lecturer to students is 1:12.
In terms of amenities, the academy has two professional kitchens, which are furnished with state-of-the-art equipment. All the lecture rooms in the academy are air-conditioned. It also has a resource center where the faculty and students can research, study and relax. They can make use of the center’s resources such as books and computers with Internet connections.
Two-Year Culinary Arts Chefs Programme
This culinary arts programme consists of one semester for in-school training and another semester for culinary internship per school year. To ensure that the students will be prepared for employment and for them to be ahead in the tough hospitality industry, the academy has made a programme that can provide intensive culinary arts practical training education, combined with food and beverage service modules. The academy emphasizes on traditional culinary techniques for the first year of studies and latest culinary techniques and trends during their second year of studies.
Included in this course is a Restaurant Operations Module that allows students to be hands-on in operating the ICAAC Training Restaurant. They will be responsible in food preparation and other restaurant services. They are made to prepare a la carte, table ď hôte, buffet, and other menus. Before they graduate, they are also required to organize a grand final dinner, where they will be inviting food critics, executive chefs, hotel and resort managers, food and beverage experts, and other experienced people in the industry.
To be able to graduate, a student has to pass the International City & Guilds Written Examinations for the Advanced Diploma in Culinary Arts – IVQ3 and the final practical assessment for the Certificate in Food & Beverage Service. Students are also required to complete two culinary internships locally or internationally for at least 12 months. ICAAC can help students who wish to work in Europe, USA or Australia through its international internship coordinator.

- City & Guilds Certificate in Food Preparation and Cooking – IVQ1This course teaches the students the most basic techniques and practices in culinary arts. Nutrition, food preparation and cooking methods, cost control operations, and equipment care and storage are discussed in theory and applied in practical classes. The most common food and safety hazards while at work will also be highlighted.
- City & Guilds Diploma in Food Preparation and Cooking (Culinary Arts) – IVQ2This programme emphasizes higher levels of food and safety hazards. Also included in the course are kitchen maintenance and design, as well as budgeting and costing control. Menu planning, nutrition and dietetics are also thoroughly discussed. There will also be thorough discussions and demonstrations on preparing and cooking meat, poultry and fish, stocks, soups and sauces, pasta and rice dishes, vegetables, and pastries.
- City & Guilds Diploma in Patisserie – IVQ2
Included in this programme are lessons on food and safety hazards, kitchen maintenance and design, and budgeting. This course will give emphasis on creating different desserts such as cakes, frozen desserts, as well as fruit-based, meringue-based and paste-based products. Students will also learn how to prepare chemically-aerated and fermented products, and use decorative equipment to make more delicious and beautiful desserts.
- City & Guilds Advanced Diploma in Culinary Arts – IVQ3Those who are more interested in managerial roles should also take this course. It focuses on food safety operations and supervision, staff organization in the kitchen and auxiliary areas, product development and presentations. There will also be an emphasis on a more in-depth knowledge in cultural dimensions of food, costing, budgeting, and materials management. The development and use of production systems, planning, organization, quality assurance of products and services will also be tackled. Students will also study menu policy and planning as they are integrated into kitchen managerial skills, training and team development.
