Carnivore is a new restaurant in Mabolo that all meat lovers will surely love!
Why Carnivore, you ask? “Because most of the Cebuanos really love meat, and that’s exactly what we want to offer them”, says Chef Barbra Sia, one of the owners of the restaurant.

Chef Barbra on the move; she’s a Food and Beverage graduate from Punlaan School in San Juan, Metro Manila
“One of the reasons why we opened our restaurant is because we want to share what we’ve learned for 3 years from our previous jobs in Canada. We also want to introduce Sous Vide (cooking in slow fire or low temperature) here in Cebu. We like to use every part of the animal as much as possible, especially the not-so-famous cuts like the veal cheeks. Our restaurant is a Chef-driven restaurant. Us owners are hands-on. We not just supervise but we also work the line. We open and close the restaurant. That’s how we love so much what we do.” says Chef Kurt Famador, the other owner of Carnivore. He’s a Culinary graduate from the Philippine School of Culinary Arts in Cebu.

Chef Kurt explaining to Everything Cebu his unique and fresh way of preparing food in Carnivore’s kitchen; he spent 3 years in Canada and wishes to bring Canadian food with a touch of Filipino to the Cebuano diners.
The restaurant boasts of a cozy ambiance and a cool open kitchen, which is intended to show customers how they prepare all their dishes with utmost cleanliness, organization, and quality.

Their main dining area (inside) can accommodate 18 people, while the al fresco seats can cater up to 30 pax.
When asked about their menu, Chef Barbra said “Our menu is globally inspired. If given the chance to open up a second restaurant, we want to do a “farm to table” dining/concept.” Carnivore comes with a small select menu, which changes every 2 weeks. This is because the owners want to make sure that they don’t overstock and can consistently use fresh ingredients for all their dishes.
Everything Cebu took the time to check out this new and exciting restaurant last week, and here are the delectable starters that the owners generously served our hungry stomachs!
Their equally tasty main dishes, on the other hand, include the following:

36-hour Sous Vide Local Kitayama Wagyu Shortplate – Australian Veal Cheeks, Mushroom Marsala Sauce (420php)
What’s our verdict? 10/10! GREAT food matched with a cool place and amiable staff and owners – the whole team really enjoyed the sumptuous lunch at Carnivore, and these pictures are proofs. 😀
